Extra Virgin Olive Oil

Every year our olive trees planted around the farmhouse give us special extra virgin olive oils.
We harvest our olives by hand in the months of October and November and bring them to the oil mill within twenty-four hours from picking. The fruits are pressed with a continuous cycle system, in order to preserve all sensory features and nutritional properties.

Extra Virgin Olive Oil

Tuscan IGP

It is a traditional blend obtained from the classic Tuscan olive oil varietals: Frantoio, Leccino, Moraiolo, Pendolino, and Maurino.

Organoleptic parameters

In compliance with the parameters established for the award of the PGI certificate : acidity 0.27 % (PGI <0.6%); total polyphenols 788 mg/kg.

Tasting features

This evoo has a medium intense and fruity taste with strong aromas of artichoke and fresh grass. Moderately bitter and with a typical, delicate and persistent pungent note in the finish.

Food pairings

Perfect as a raw dressing for salads and vegetables, soups and for our traditional bruschetta.

Packaging

Available in 0.50 liter bottles or in 1 lt, 3 lt or 5 lt cans.

Extra Virgin Olive Oil

Lazzero

Certified LAZZARO single Evoo varietal. Single varietal evoo obtained exclusively from the varietal called “Lazzaro”, a rare native varietal typical of the area of Casale Marittimo / Bibbona.
From its olives a precious evoo is obtained, with extremely delicate flavors and aromas.

Organoleptic parameters

Acidity 0.22 %; total polyphenols 814 mg/kg.

Tasting features

This Evoo has a moderately intense, slightly fruity flavor, with aromas of green olive and herbaceous note. Slightly bitter and with a refined pungent note in the finish.

Food pairings

Ideal on raw food and carpaccio, both meat and fish, suitable for dishes with shellfish and for seasoning pasta and risotto.
